BARBECUED CHICKEN

Preparation Time:  20 Minutes                              

Cooking Time:  30 Minutes

Make Ahead:  You can prepare the
barbecue sauce up to 3 days ahead.
Place the sauce in an airtight container
and refrigerate.

Serves 4

Serve this tangy barbecued chicken
with a side of coleslaw for a summer
barbecue favorite.

Sugar, Cider Vinegar, Worcestershire Sauce, Garlic, Salt

INGREDIENTS

1 can diced tomatoes (14 1/2 ounce size) or 1 1/2 cups diced fresh tomatoes
1 cup tomato sauce or ketchup
1/4 cup chopped red onion
1 tablespoon packed brown sugar
1 tablespoon cider vinegar
1/4 teaspoon salt
1 tablespoon worcestershire sauce
2 cloves of crushed garlic
1/4 teaspoon cayenne pepper
1 chicken, quartered (about 3 pounds)

  1. Preheat oven to 350 degrees.  Drain tomatoes (no need to keep the juice) and set aside.  Combine tomato sauce, onion, sugar, vinegar, salt, worcestershire sauce, garlic and cayenne pepper in a medium saucepan.  Mix well.
  2. Add the drained tomatoes to the saucepan and cook the sauce over a medium heat, stirring occasionally until slightly thickened (about 10 minutes).
  3. Place the chicken on a foil lined broiler pan and brush both sides of the chicken with the sauce, reserving 3/4 cup.  Bake the chicken until cooked through and juices run clear when meat is pierced with a knife (about 20 minutes).
  4. Preheat the broiler and brush the chicken with the remaining sauce.  Broil the chicken turning once until lightly browned (about 5 minutes per side).

VARIATION

Make this chicken dish a little spicy by adding 2 tablespoons hot pepper sauce to the sauce mixture.

EXPRESS COOKING

You can prepare the chicken on the barbecue and omit baking and broiling.  Grill the chicken for about 40 minutes.

You can soften brown sugar that has hardened, by placing it in a glass jar with a tight fitting lid.  This will soften the sugar and make it easier to measure.

MONEY SAVING TIPS

Large economy size cans of tomato products can be found in the value isle of the supermarket.  Once a can has been opened you can place any unused tomatoes in small plastic containers and freeze up to 6 months for future use in other recipes.
