BEEF STIR FRY

Make Ahead:  You can prepare the
beef through the cooking stage and
then cover and refrigerate for up to
3 days or freeze for up to 2 weeks.
Thaw an stir fry for about 3 minutes,
the proceed with adding the broth
mixture

Serves 6

Serve this tasty oriental dish with fried rice.

SHOPPING LIST

Sirloin Steak, Green Onions, Broccoli, Mushrooms, Water Chestnuts, Soy Sauce,
Frozen Snow Peas, Beef Broth, Oil, Garlic, Cornstarch

INGREDIENTS

1 pound sirloin steak
4 green onions
1 can beef froth (10 ounce size)
1 tablespoon cornstarch
1 tablespoon soy sauce
2 tablespoons vegetable oil
1 clove garlic, minced
2 cups shopped broccoli
1 can sliced water chestnuts, drained (7 ounce size)
1 cup sliced mushrooms (4 ounces)
1 package frozen snow peas (10 ounce size)

  1. Cut the steak into thin slices.  Cut the green onions into 1 inch pieces.  Combine the broth, cornstarch and soy sauce in a small bowl and mix until the cornstarch dissolves.  Set aside.
  2. Heat oil in a large skillet or wok over a medium-high heat and add the steak and garlic.  Stir fry for 3 minutes or until browned.  Remove with a slotted spoon and keep warm.
  3. Add broccoli, water chestnuts, green onions and mushrooms to the skillet and stir fry for about 3 minutes.  Return the steak to the skillet.  Add the snow peas.
  4. Add broth mixture to the skillet and cook stirring continually for 3 minutes or until thickened.

VARIATION

Add some thinly sliced carrots to the broccoli, water chestnuts, green onions and mushrooms for extra color and crunch.  You can also stir in 1/4 cup of cashews just before serving.

EXPRESS COOKING

Use a wok or an extra large skillet to speed up the cooking time.  The larger the cooking surface the faster the food will heat.

You can also reduce the vegetable preparation time by using a large package of frozen mixed vegetables instead of fresh vegetables.

MONEY SAVING TIPS

You can use the unused portion of the broccoli stems by peeling and cutting them into matchstick size pieces and cook them along with the florets.  Or you can serve them in a salad or as a healthy snack.
