BOSTON CREAM PIE

Make Ahead:  The flour, baking powder
and salt can be measured and sifted
together ahead of time.

Serves 6

Serve this classic dessert with your
favorite gourmet coffee.

SHOPPING LIST

Pudding Mix, Canned Frosting, Whipped Cream, Cherry, Butter,
Sugar, Egg, Flour, Vanilla, Milk, Salt, Baking Powder

INGREDIENTS

1/3 cup butter, softened
1/2 cup sugar
1 egg
1/2 teaspoon vanilla extract
1 1/4 cups flour
1 1/4 teaspoons baking powder
1/4 teaspoon salt
2 2/3 cups milk, divided
1 package vanilla instant pudding mix (3 ounce size)
1 can fudge frosting (16 ounce size)
whipped cream
maraschino cherry

  1. Preheat oven to 350 degrees.  Grease and flour an 8 inch round cake pan.  Cream the butter in a large bowl with an electric mixer set on medium speed until light and fluffy.
  2. Beat in the egg and vanilla.  Sift the flour, baking powder and salt together.  Add to the creamed mixture alternately with 2/3 cup milk.  Pour into the prepared cake pan.
  3. Bake for 30 minutes or until golden brown.  Cool the cake in the pan for 10 minutes, then turn out onto a wire rack and cool completely.  cut the cake into 2 layers.
  4. Prepare the pudding mix with the remaining milk (using package directions and spread between the cake layers.  Microwave the frosting for 45 seconds then pour over the top.  Garnish with shipped cream and a cherry.

VARIATION

You can make the frosting a little crunchy by adding copped pecan pieces before microwaving.

EXPRESS COOKING

The cooled cake layers will be easier to split with a serrated knife.  the slices will be more even if you place the cake flat on the kitchen counter, place your left hand lightly on the top of the cake then slice horizontally with your right hand using a slight sawing motion (or vice versa if you are left handed).

MONEY SAVING TIPS

You can check to see how fresh your eggs are by submerging them in a bowl of cold water.  If they rise to the surface they may have absorbed some air and may not be fresh.  These eggs should not be used and should be discarded.
