BREAKFAST CASSEROLE

Preparation Time:  15 Minutes                              

Cooking Time:  40 Minutes

Make Ahead:  Prepare the egg mixture
up to 4 hours ahead.  Cover and
refrigerate until ready to use.

Serves 6

Serve with frosty orange juice for a
complete and nutritious breakfast.

SHOPPING LIST

Bell Pepper, Hot Sausage, White Sandwich Bread, Half and Half, Cheddar Cheese
Oil, Onion, Eggs, Dry Mustard, Salt

INGREDIENTS

2 tablespoons vegetable oil
1 onion, chopped
1 green bell pepper, chopped
6 slices buttered white sandwich bread
1 pound hot bulk pork sausage, cooked, crumbled and drained
6 large eggs
1 pint half and half
1 teaspoon dry mustard
1 teaspoon salt
3 cups grated cheddar cheese

  1. Preheat the oven to 350 degrees.  Grease a medium baking dish.  Heat oil in a small skillet over a medium high heat and add onion and pepper, cook until tender (about 5 minutes).
  2. Line the prepared baking dish with bread.  Top with onions and peppers and spread the sausage evenly over the onions and peppers.
  3. Beat eggs, half and half, mustard and salt in a medium bowl with a fork or whisk until smooth (about 1 minutes) and pour over the sausage in the baking dish.
  4. Sprinkle the cheese over the top and bake until the eggs are set (about 40 minutes).

VARIATION

You can use sliced sauteed kielbasa instead of hot sausage for a really great and less spicy flavor.

EXPRESS COOKING

Instead of sauteeing the onion and bell pepper, to save time you can microwave them.  Place them in a dish with 1 tablespoon of oil and microwave on HIGH for 1 minute.

MONEY SAVING TIPS

This hearty and great tasting breakfast casserole is a great opportunity to really save money.  Purchase day old bread or use any bread heels you may have frozen.  Either one will taste great.
