BROWNIE PIE

Make Ahead:  You can make this pie
1 day ahead and store covered at
room temperature.

Serves 6

For a really special treat, serve this
pie with a scoop of vanilla ice cream.

SHOPPING LIST

Cocoa Powder, Walnuts, Margarine, Sugar, Eggs,
Vanilla, Flour

INGREDIENTS

1 cup melted margarine
2/3 cup unsweetened cocoa powder
1 cup sugar
3 eggs
1 1/2 teaspoons vanilla extract
6 tablespoons flour
1 1/2 cups chopped walnuts, divided

  1. Preheat the oven to 325 degrees.  Combine the margarine, cocoa and sugar in a bowl and blend well.  Add the eggs (1 at a time) mixing well after each addition.
  2. Add the vanilla and flour and mix until smooth.  Add 1 cup of walnuts and mix well.
  3. Pour into a greased 9 inch pie plate and sprinkle the remaining walnuts over the top.
  4. Bake for 30 minutes or until the brownie pie pulls from the sides of the pie plate.  Cool for 5 minutes before cutting.

VARIATION

For a different flavor, use almond extract in place of the vanilla extract and slivered almonds in place of the walnuts.

EXPRESS COOKING

Store opened jars or cans of nuts in the refrigerator or freezer to keep them fresh longer.

Chop nuts in the food processor by pulsing on and off, but be careful not to over process them and create nut butter.

MONEY SAVING TIPS

Use store brand cocoa because they don't do extensive advertising the store branch merchandise will usually cost less.
