CHEDDAR GRILLED POTATOES

Preparation Time:  10 Minutes                              

Cooking Time:  1 Hour

Make Ahead:  You can prepare this
potato side dish ready to grill, up to
2 hours before serving

Serves 4

This is another dish that goes well with
anything.  Grilled Tuna Steaks are a great
main dish.

SHOPPING LIST

Potatoes, Cheddar Cheese, Fresh Parsley, Half and Half,
Butter, Salt, Pepper

INGREDIENTS

4 russet baking potatoes
3 tablespoons butter or margarine, sliced
1/1/2 teaspoons salt
1/4 teaspoon pepper
1 cup grated cheddar cheese
2 tablespoons chopped fresh parsley
3/4 cup half and half

  1. Preheat grill.  Fold a 48 inch length of heavy duty aluminum foil in half widthwise.  Cut potatoes into thin lengthwise strips (like french fries).
  2. Arrange potatoes on the center of the foil.  Melt butter in a small saucepan or microwave and drizzle over the potatoes.
  3. Sprinkle with salt, pepper, cheddar cheese and parsley.
  4. Gold up edges of the foil slightly and pour in the half and half.  Bring the edges of the foil together and fold to close securely.  Place on the grill and cook until potatoes are tender (about 1 hour).

VARIATION

You can also use shredded Swiss or Gruyere cheese instead of Cheddar.

EXPRESS COOKING

Save preparation time by cutting the potatoes into 1/4 inch slices instead of shoestrings.

MONEY SAVING TIPS

You can buy russet potatoes at least two different ways.  Large ones are loose, smaller potatoes are packed in 5 and 10 pound bags.  The potatoes are exactly the same so buy them in the bags for the lowest price.
