GRILLED CHICKEN SANDWICHES

Preparation Time:  15 Minutes                              

Cooking Time:  10 Minutes

Make Ahead:  You can double or even triple
the Honey Sauce to keep on hand.  It tastes
great on ham or turkey sandwiches or even
as a dipping sauce for chicken fingers.

Serves 4

Serve these sandwiches with a side of potato
Salad.

SHOPPING LIST

Boneless Skinless Chicken Breasts, Lemon, Lettuce, Tomato, Mayonnaise,
Kaiser Rolls, Garlic, Honey

INGREDIENTS

4 skinless, boneless chicken breasts (about 4 ounces each)
1/3 cup honey
1/4 cup lemon juice
1 clove of minced garlic
4 Kaiser rolls
4 lettuce leaves
4 tomato slices

HONEY SAUCE
4 tablespoons honey
4 tablespoons mayonnaise

  1. Preheat a grill.  Cut chicken breasts in half and pound to 1/4 inch thick cutlets.  Mix honey, lemon juice and garlic in a shallow baking dish.  Keep about 1/3 of the marinade.
  2. Add chicken to baking dish and coat each piece.  Do not keep the marinade in the baking dish, throw it away.  Grill the chicken basting with the reserved marinade for about 5 minutes per side.
  3. Prepare the honey sauce by blending the honey and mayonnaise in a small bowl, mix well.
  4. Split rolls in half.  Top the 4 bottom halves with lettuce, tomato and chicken.  Drizzle some honey sauce over the chicken.  Replace the roll tops and serve.

VARIATION

You can add a tablespoon or two of either brown mustard or Dijon mustard to the Honey Sauce for a zestier flavor.

EXPRESS COOKING

To have lettuce ready in an instant, rinse the lettuce, shake off the excess moisture and wrap the lettuce in paper towels.  Store in a plastic bag in the refrigerator for up to 1 week.

MONEY SAVING TIPS

You can salvage honey that has crystallized by placing the entire jar of honey in a saucepan and add enough water to cover the jar halfway.  Heat over a low heat until the honey liquefies.
