CHOCOLATE ICE CREAM CAKE

Make Ahead:  You can freeze the
uncut cake for up to 2 weeks
for a fantastic dessert without
the last minute hassle and rush.
To serve, defrost slightly and cut
into squares and top with berries.

Serves 12

Cocoa makes a great partner to
this chocolate dessert.

SHOPPING LIST

Vanilla Ice Cream, Evaporated Milk, Raspberries, Fudge Brownie Mix,  
Chocolate Chips, Walnuts, Confectioners' Sugar, Vanilla Extract, Butter

INGREDIENTS

1 package fudge brownie mix (22 ounce size)
1/2 gallon vanilla ice cream, softened
2/3 cup semisweet chocolate chips
2 cups confectioners' sugar
1 1/2 cups evaporated milk
1/2 cup butter or margarine
1 teaspoon vanilla extract
1 cup chopped walnuts
1 pint raspberries

  1. Preheat the oven to 350 degrees.  Prepare and bake the brownies according to the package directions for cake style brownies in a 9 x 13 inch baking pan.  Cool the brownies in the pan.
  2. Spread the softened ice cream over the brownie layer, cover and freeze until the ice cream is firm (about 10 minutes).
  3. Combine the chocolate chips, confectioners' sugar, evaporated milk and butter in a medium saucepan and bring to a boil stirring constantly over a medium high heat.  Reduce the heat to medium.
  4. Cook the mixture stirring for about 5 minutes, remove from heat.  Stir in vanilla and walnuts and cool.  Spread over the ice cream, loosely cover and freeze.  Cut into squares and divide the berries among the squares.

VARIATION

Top this fantastic dessert with a 21 ounce can of strawberry pie filling for a really colorful and tasty berry flavored layer.

EXPRESS COOKING

Before you shop nuts in a blender, add a little flour, sugar or cornstarch.  This will keep the nuts separate and will prevent them from turning into a paste.

If you don't have time to bake brownies, ask your baker for a tray of uncut brownies.

MONEY SAVING TIPS

Chocolate that has not been properly stored in a damp or cool environment may develop whitish-gray sugar crystals.  Don't worry, the flavor and texture will only be slightly affected.
