CITRUS GLAZED CHICKEN

Make Ahead:  Make the marinade
the night before in a stainless steel
bowl, add the chicken, cover and
refrigerate overnight.

Serves 6

SHOPPING LIST

Chicken Breasts, Orange Juice, Soy Sauce, Hot Pepper Sauce,
Oil, Paprika, Garlic

INGREDIENTS

6 chicken breasts with bone in (about 6 ounces each)

MARINADE
1/2 cup soy
1 cup orange juice
1 tablespoon paprika
2 cloves minced garlic
1/8 teaspoon hot pepper sauce
1/4 cup vegetable oil

  1. Place chicken breasts in a shallow dish.  Prepare the marinade by mixing soy sauce, orange juice, paprika, garlic, hot pepper sauce and oil in a medium bowl.  Reserve about 1/3 of the marinade.
  2. Pour the marinade over the chicken and cover.  Marinate in the refrigerator for about 10 minutes.  Preheat the broiler and remove the chicken from the marinade.  Discard the marinade that was in the dish.  
  3. Place the chicken skin side down on a broiler pan and brush with some of the reserved marinade.  Broil the chicken for 15 minutes, basting twice.
  4. Turn the chicken and broil, basting several times for about 12 minutes longer.  Arrange the chicken on a serving platter and serve.

VARIATION

You can use pineapple juice instead of orange juice for a tropical flavor.

EXPRESS COOKING

Preheating the broiler and the broiler pan will ensure that the chicken will cook more quickly and evenly.

Lightly score the chicken skin to expose the meat underneath, be ensure that the quick marinade is fully absorbed into the chicken.

MONEY SAVING TIPS

Fresh minced garlic is the real secret to tangy chicken.  If your garlic has begun to sprout, don't worry, simply cut the clove in half and remove the green core.  You can then use the rest of the clove.
