CRISP CUCUMBER ROUNDS

Make Ahead:  You can prepare
the cucumber spread up to 2
hours ahead.  Refrigerate until
ready to use.

Makes 64

You can serve mini quiches as the perfect
accompaniment

SHOPPING LIST

Cream Cheese,  Cucumbers, Green Onions, Bread, Salt, Pepper

INGREDIENTS

2 medium cucumbers
12 ounces cream cheese softened
4 green onions, finely chopped
1 teaspoon salt
1/4 teaspoon pepper
1 loaf soft white bread (about 32 slices)

  1. Peel cucumbers and cut lengthwise into quarters.  Remove seeds.  Chop cucumbers very finely.
  2. Place chopped cucumbers in a large kitchen towel and wring or blot to remove all moisture.
  3. Combine cream cheese, cucumbers, green onions, salt and pepper in a medium bowl; mix well
  4. Cut 2 rounds from each slice of bread with a small round cookie cutter (1-1/2 inches or less).  Spread with cucumber mixture.  Serve immediately.

VARIATION

For other kinds of hors d' oeuvres, spread the mixture on cucumber rounds, melba toast or specialty breads.

EXPRESS COOKING

Another quick way to deseed cucumbers is to slice them into halves lengthwise and use a pointed spoon to scoop out the seeds.

MONEY SAVING TIPS

You can cut costs by purchasing a "king size sandwich" loaf of bread and cut 3 rounds from each slice of bread.  Use the leftover bread scraps to make a great bread pudding.
