and refrigerate until ready to use.

SHOPPING LIST

Pudding Mix, Frosting, Whipped Topping, Butter, Flour,
Salt, Eggs, Milk

INGREDIENTS

1/2 cup butter of margarine
1 cup water
1 cup all purpose flour
1/4 teaspoon salt
4 eggs
1 package vanilla instant pudding mix (10 ounce size)
1 cup milk
2 cups whipped topping
1 can milk chocolate frosting (16 ounce size)

  1. Preheat the oven to 400 degrees.  Bring the butter and water to a boil in a saucepan.  Add all the flour and salt and cook stirring vigorously until the mixture forms a ball.  remove from the heat.
  2. Add eggs 1 at a time beating until smooth after each addition.  Spoon into strips on a greased baking sheet.  Bake for 30 minutes or until golden brown.
  3. Split lengthwise and scoop out the doughy centers.  Cook on wire racks.  prepare the pudding mix with milk using package directions and blend in the shipped topping.
  4. Spoon the pudding into the eclairs and replace the tops.  Warm the frosting in the microwave on HIGH for 3 minutes and drizzle over the eclairs.

VARIATION

For a special lunch, fill the eclairs with creamed chicken instead of pudding and omit the frosting.

EXPRESS COOKING

If you want a thicker pudding, use half the amount of milk.

Prepared pudding can usually be found in the dairy section of the grocery store.  Try different flavors like, butterscotch or chocolate.

MONEY SAVING TIPS

Eclairs puff better if they are cooked immediately.  If you prepare the dough ahead of time, press plastic wrap against the surface of the doug to prevent a skin from forming.
