BLACK FOREST CAKE

Make Ahead:  You can prepare this
scrumptious cake up to 8 hours ahead.
Refrigerate until ready to serve.

This delicious classic cake goes
great with espresso.

SHOPPING LIST

Chocolate Cake Mix, Whipping Cream, Confectioners' Sugar, Cherry Brandy,
Cherry Pie Filling, Maraschino Cherries, Mint Sprigs

INGREDIENTS

1 package chocolate cake mix (a size large enough to make a 2 layer cake)
2 cups whipping cream
1/3 cup confectioners' sugar
1/4 cup cherry brandy or 2 teaspoons vanilla extract
1 can cherry pie filling (21 ounce size)
4 maraschino cherries
4 mint sprigs

  1. Prepare the cake according to the package directions.  Bake in three 8 or 9 inch round cake pans.  Cool for 5 minutes and then invert onto wire racks.
  2. While the cake is cooling, whip the cream in a chilled large bowl with an electric mixer, Gradually beat in the confections' sugar and the cherry brandy.
  3. Place on cake layer on a plate and spread one-third of the whipped cream and one half of the pie filling.  Top with another cake layer and repeat the layering.
  4. Top with the remaining cake layer and spread the remaining whipping cream over the top.  Decorate with cherries and mint.

VARIATION

For a real cherry flavor, lightly sprinkle some cherry brandy on each cake layer before spreading the whipped cream.

EXPRESS COOKING

Nonstick cake pans will ensure easy removal of the cake.  These pans still require you to grease them just like traditional cake pans, but they will be much easier and faster to clean up.

MONEY SAVING TIPS

You can really save money by using a 16 ounce container of thawed whipped topping instead of the whipping cream and confectioners' sugar.  Buy a low-fat brand and save on calories too.
