FRENCH ONION SOUP

Preparation Time:  10 Minutes                              

Cooking Time:  30 Minutes

Make Ahead:  You can make this soup
ahead of time and freeze in single serving
size containers.  Reheat gradually before
serving

Serves 4

This soup goes great with a spinach salad.

SHOPPING LIST

Beef Broth, French Bread, Mozzarella Cheese, Onions, Butter, Flour, Salt, Pepper

INGREDIENTS

3 medium onions, sliced thin
1 tablespoon butter
1/1/2 teaspoons flour
2 cans beef broth (14 ounce each)
Salt and Pepper
4 slices french bread (toasted)
1/2 cup shredded part-skim mozzarella cheese

  1. Saute onions in butter in a large saucepan over medium heat until tender.
  2. Sprinkle onions with flour and cook for 2 to 3 more minutes stirring continually until golden brown.
  3. Add broth, salt and pepper to taste.  Simmer for 20 minutes and preheat the broiler.
  4. Ladle the soup into ovenproof bowls and top each with a toast slice.  Sprinkle with mozzarella and broil until cheese melts.

VARIATION

Sprinkle the toast with cheese and broil or microwave until the cheese melts.  Place in bowls and ladle soup over toast.

EXPRESS COOKING

To keep the onion from slipping, slice it in half from top to bottom then lay the cut side down and slice into the desired thickness.  You can also keep the sauteed (or carmelized) onions in the freezer for several months.  Then they will be ready next time you prepare this recipe.

MONEY SAVING TIPS

Keep a lid on odors in the refrigerator and store your onions in a screw-top glass jar.  Don't store them in plastic as the odor will permeate the plastic and affect the taste of other food.
