HONEY PORK CHOPS

Make Ahead:  You can prepare the basting
sauce up to 3 days ahead.  Store in an
airtight container and refrigerate.

Serves 4

This delicious pork dish goes great
with hash browns

SHOPPING LIST

Pork Chops, Orange Juice, Tarragon, Honey, Dijon Mustard, Vinegar,
Garlic Powder, Worcestershire Sauce

INGREDIENTS

4 boneless pork chops (about 1 inch thick)
1/4 cup honey
2 tablespoons dijon mustard
1 tablespoon orange juice
1/4 teaspoon dried tarragon
1 teaspoon cider Vinegar
1/2 teaspoon worcestershire sauce
1/8 teaspoon garlic powder

  1. Preheat grill.  Brush the rack with vegetable oil and trim excess fat from the pork chops.  Score the outer edge of the chops at 1 inch intervals.
  2. Blend honey, mustard, orange juice, tarragon, vinegar, worcestershire sauce and garlic powder in a small bowl.
  3. Place the chops on the grill about 4 inches from the heat.  Brush with the honey mixture and grill for 8 minutes, brushing every 2 minutes with the honey mixture.
  4. Turn the chops over and grill for 8 minutes longer (or until cooked through) basting every 2 minutes with honey mixture. 

VARIATION

For a real citrus taste, add 1/2 teaspoon grated orange peel the the basting sauce.

EXPRESS COOKING

When possible, use all natural hardwood charcoal, not briquettes for grilling.  the fire is ready in half the time and there is no chemical tasting residue left on the food.

MONEY SAVING TIPS

You can save money by purchasing a boneless pork loin roast when it is on sale and cutting it into 1 inch chops.  Any leftover chops can easily be frozen for use later.
