KEY LIME PIE

Preparation Time:  20 Minutes                              

Cooking Time:  None

Make Ahead:  You can make this pie
up to 8 hours ahead.  Cover and chill
until ready to serve.

Serves 6

Try serving this great pie with iced
coffee for a wonderful summertime
dessert.

SHOPPING LIST

Sweetened Condensed Milk, Limes, Whipping Cream, Graham Cracker
Piecrust, Eggs, Sugar

INGREDIENTS

4 egg yolks
1 can sweetened condensed milk (14 ounce size)
2/3 cup fresh lime juice
1 graham cracker piecrust (9 inch size)
1/2 cup shipping cream
2 tablespoons sugar
1 lime, thinly sliced

  1. Combine egg yolks and condensed milk in a heavy saucepan over a medium heat.
  2. Add lime juice to the saucepan and cook stirring continually until the mixture reaches 160 degrees or until the mixture is thick enough to coat the back of a spoon (about 8 minutes).
  3. Pour the filling into the piecrust and chill the pie in the freezer until firm.
  4. Beat the whipping cream and sugar in a chilled bowl with an electric mixer set at a high speed until soft peaks form (about 5 minutes).  Slice the pie and garnish the pie with shipped cream and lime slices.

VARIATION

If you are a chocolate lover, use a prepared chocolate cookie crumb piecrust instead of the graham cracker piecrust.

EXPRESS COOKING

Lime twists are a very nice garnish, but grated lime zest is just as decorative and faster to prepare.

MONEY SAVING TIPS

Key limes are small limes that are grown in the south of Florida and can sometimes be very expensive and hard to find.  You can purchase bottled key lime juice in most gourmet markets and save on the cost of the fresh fruit.
