PEANUT BUTTER CHOCOLATE MOUSSE

Cooking Time:  None

Make Ahead:  This dessert is best if
you prepare it 24 hours ahead.  Keep
the mousse frozen for up to 3 days.

Serves 12

Chocolate Wafers are the perfect
accompaniment to this great dessert.

SHOPPING LIST

Frozen Yogurt, Peanut Butter, Butterscotch Pudding Mix, Whipped
Topping, Chocolate Covered Buttercrunch Candy Bars

INGREDIENTS

1 quart chocolate frozen yogurt, softened
1 package butterscotch pudding mix (3 1/2 ounce size)
2 cups chunky peanut butter
16 ounces whipped topping
2 chocolate covered buttercrunch candy bars (2.1 ounce size)

  1. Combine the yogurt, pudding mix, peanut butter and whipped topping in a large bowl and mix quickly so the yogurt remains frozen.
  2. Spoon the yogurt mixture into a medium serving bowl, smooth the top evenly with a spatula.
  3. Place the candy bars in a resealable plastic bag and crush with a rolling pin or a small heavy skillet.  Sprinkle the crushed chocolate evenly over the top of the yogurt mixture.
  4. Freeze until the mousse is firm (about 1 hour).  Keep frozen until ready to serve.

VARIATION

For a really rich and creamy dessert, substitute ice cream for the frozen yogurt.

EXPRESS COOKING

Spoon the mousse into small foil or paper muffin cup  liners.  the yogurt will freeze faster because of the smaller size and also makes great individual desserts.

MONEY SAVING TIPS

Be sure to check the per ounce price when buying whipped topping.  Often the 8 ounce size container costs less per ounce than the 16 ounce size container.  the topping can be frozen for up to 4 months.
