STUFFED MUSHROOMS

You can make the mushrooms up to 4 hours
ahead, refrigerate covered loosely with
plastic wrap until you are ready to bake.

Serves 6

Serve these savory mushrooms with lasagna
as a great vegetable side dish

SHOPPING LIST

Mushrooms, Sausage, Mozzarella Cheese, Bread Crumbs, Dried Parsley

INGREDIENTS

12 large mushrooms
6 ounces mile or spicy sausage
3 tablespoons seasoned bread crumbs
1/2 cup shredded mozzarella cheese
2 teaspoons dried parsley

  1. Preheat over to 375 degrees and grease a large baking sheet.  Remove and chop mushroom stems
  2. Heat a medium skillet over a medium high heat and add sausage.  Cook until browned and crumbly (about 5 minutes); drain.  Stir mushroom stems crumbs and 1/4 cup mozzarella into skillet.
  3. Remove from heat and spoon sausage mixture into mushroom caps.  Place on prepared baking sheet.
  4. Top mushrooms with remaining mozzarella cheese and bake until stuffing is hot (about 15 minutes). Place on a serving platter and garnish with parsley.

VARIATION

If you like a really cheesy flavor, add 3 tablespoons of Parmesan cheese to the bread crumb mixture.

EXPRESS COOKING

To really save time and keep you kitchen cool in the hot summer months, you can microwave the stuffed mushrooms.  Place stuffed mushrooms on a microwave safe plate and cover with plastic wrap.  Microwave on HIGH for 5 minutes or until hot and bubbly.

MONEY SAVING TIPS

If you have mushrooms that are just past their peak freshness, don't throw them out.  Chop them into small pieces, cook with a little butter until tender and use them in stuffing or casserole dishes.
