GRILLED MUSTARD CHICKEN

Preparation Time  15 Minutes

Cooking Time:  20 Minutes                                    

Make Ahead:  Prepare the chicken and brush
with the mustard mixture up to 4 hours
ahead.  Cover and refrigerate until ready
to cook.

Serves 4

Serve with fresh steamed green beans for
a complete meal.

Parmesan Cheese, Chicken, Cheddar Cheese, Green Onion, Butter,
Dijon Mustard, Onion, Flour, Milk, Worcestershire Sauce

INGREDIENTS

3 tablespoons butter, melted
1 tablespoon dijon mustard
2 tablespoons grated parmesan cheese
8 boneless chicken pieces (4 ounces each)

CHEESE SAUCE
2 tablespoons butter
2 tablespoons minced onion
2 tablespoons all purpose flour
1 cup milk
3/4 cup shredded cheddar cheese
1/2 teaspoon worcestershire sauce
1 green onion sliced (about 2 tablespoons)

  1. Preheat grill or broiler.  Combine 3 tablespoons butter, mustard and parmesan in a small bowl and mix well.  Brush the chicken with the mustard mixture.
  2. Green the grill rack or broiler pan.  Brill or broil the chicken, turning and basting several times until the juices run clear when the chicken is pierced with a knife (about 20 minutes).
  3. Melt butter in a saucepan over a low heat and add onion.  Cook until tender.  Stir in the flour and add milk and cheese.  Cook stirring constantly until the cheese melts (about 5 minutes).  Add worcestershire sauce.
  4. Divide the sauce evenly among individual serving plates and top each with chicken.  Sprinkle with green onion and serve immediately.

VARIATION

Add 1 tablespoon chopped green chiles to the cheese sauce for a Southwestern flavor.

EXPRESS COOKING

When you are really in a hurry, you can make a quicker sauce with 1 pound of processed american cheese.  Melt the cheese in a saucepan and stir in 1 chopped green onion, 1/2 cup milk and the worcestershire sauce.

MONEY SAVING TIPS

Turkey wings also work great in this recipe.  They are very meaty and less expensive than most white meat chicken pieces.  Grilled turkey also has a rich distinctive flavor that you and your guests will love.
