ONION BLOSSOM

Make Ahead:  You can prepare the onions
up to 4 hours and keep refrigerated until
ready for frying.

Serve this tasty appetizer with a peppery dip

SHOPPING LIST

Vidalia Onion, Beer, Oil, Eggs, Milk, Flour, Baking Powder
Salt, Cayenne Pepper

INGREDIENTS

vegetable oil for frying
1 large Vidalia onion
3 cups cold water
2 large eggs, slightly beaten
1/2 cup beer or club soda
1/2 cup milk
2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cayenne pepper

  1. Preheat oil in a large saucepan to approximately 375 degrees.  Peel the onion and cut off the bottom, leaving a flat base.  Cut into 3/4 inch wedges, but don't cut all the way through.
  2. Soak the onion in ice code water for about 20 minutes, drain thoroughly and pat dry.  Mix eggs, beer and milk in a bowl.  Mix flour and baking powder in a separate bowl.
  3. Dip the onion in the egg mixture, then dip into the flour mixture.  Dip again into the egg mixture and once again into the flour mixture.  Make sure the onion is well coated.
  4. Place the onion in the hot oil, and deep fry until golden brown and tender (about 15 minutes).  Drain the onion on paper towels.  Place th onion on a serving platter, sprinkle with salt and cayenne pepper.

VARIATION

For a crisper coating you can use self-rising flour instead of all purpose flour.

EXPRESS COOKING

You can check to see if the oil is hot enough for frying by inserting a wooden chopstick or wooden spoon handle into the hot oil and if bubbles form around the wood the oil is hot enough and ready for frying.  You can also use a slotted spoon to lower the onion into the oil as well as removing the onion from the oil.

MONEY SAVING TIPS

Mild, sweet Vidalias have a short season and a limited supply that can make them hard to find as well as expensive.  You can use any large sweet onion such as Oso Sweets from Texas, Walla Walla or Maui onions.
