PINEAPPLE FRITTERS

Make Ahead:  These tasty fritters
should be prepared just prior
to serving.

Serves 4

Serve as a dessert after an great
oriental meal or with tropical
punch as a sweet and tasty snack.

SHOPPING LIST

Canned Pineapple Rings, Confectioners' Sugar, Oil, Flour,
Salt, sugar, Egg, Milk

INGREDIENTS

3 cups plus 2 tablespoons vegetable oil
1 cup off purpose flour
1/4 teaspoon salt
1 tablespoon sugar
1 egg, lightly beaten
1 cup milk
1 can pineapple rings (20 ounce size)
1/4 cup confectioners' sugar

  1. Heat 3 cups of oil in a large deep pot over a high heat until the temperature reaches 365 degrees. While the oil is heating, combine the flour, salt and sugar in a large bowl.
  2. Mix the egg, milk and remaining oil in a small bowl.  Slowly add the liquid ingredients to the dry ingredients, stirring with a fork or whisk until smooth.
  3. Pat the pineapple rings completely dry and dip each ring into the batter, letting the excess drip back into the bowl.
  4. Lower the rings gently into the hot oil with a slotted spoon, 2 at a time.  Fry the rings until golden brown (about 2 minutes).  Drain well on paper towels and sprinkle with confectioners' sugar.

VARIATION

For a delicious change you can also use canned apricot halves.

EXPRESS COOKING

If you don't have a thermometer to test the oil temperature, drop a cute of white bread into the hot oil.  If it browns evenly in 1 minutes, the oil is ready.

MONEY SAVING TIPS

It's a good idea to buy vegetable oil in 48 ounce bottles.  However, the size can be really difficult to handle.  For easy use, transfer the oil into a pint size bottle and store the large bottle in a cool dark place.
