PIZZA BAGELS

Preparation time:  20 Minutes                                

Cooking Time:  10 Minutes

Make Ahead:  You can prepare these pizza
bagel snacks up to the baking stage, wrap
each pizza bagel in plastic wrap and freeze
for up to 1 month.  For last minute snacks
remove the pizza bagel from the freezer and
plastic wrap and bake in a 375 degree oven
for 15 minutes

Serves 6

Serve these handy little snacks with an
antipasto for last minute entertaining.

SHOPPING LIST

Lean Ground Beef, Bagels, Low Fat Mozzarella Cheese, Low Fat Cheddar Cheese,
Mushrooms, Black Olives, Onion

INGREDIENTS

8 ounces of lean ground beef:
6 medium bagels (cut in half)
1 jar of pizza sauce (14 ounce size)
1/4 cup chopped onion
1 can sliced mushrooms (4 ounces,drained)
1 can chopped black olives (4 ounces, drained)
3/4 cup shredded low fat mozzarella cheese
1/2 cup shredded low fat cheddar cheese

  1. Preheat oven to 375 degrees.  Heat a medium size skillet over a medium heat, add beef and cook until brown and crumbly.
  2. Remove beef from the skillet with a slotted spoon and drain on paper towels.  Arrange bagels (cut side up) on an ungreased baking sheet.
  3. Spread pizza sauce over bagels, sprinkle with beef.  Divide onion, mushrooms an olives evenly among the bagels.
  4. Combine mozzarella and cheddar cheese in a small bowl and sprinkle the cheese mixture evenly over the bagels.  Bake until cheese is bubbly (about 10 minutes)

VARIATION

Lightly toast some english muffins can be used in place of the bagels

EXPRESS COOKING

You can save chopping time by using one of the wide varieties of chunky vegetable packed spaghetti sauces that you can find at your supermarket.  Use this in place of the pizza sauce.

A good "keep the kitchen clean" tip to keep yourself, as well as your kitchen counter top from being splattered with grease when frying ground beef is to use a screened shield that fits over the skillet.

MONEY SAVING TIPS

Check into frozen bagels found in the frozen food section of your supermarket.  Fresh bagels can sometimes be more expensive since they are made daily.
