Pork, Rice Wine, Soy sauce, Gingerroot, Cabbage, Oil

INGREDIENTS

1 pound thinly sliced boneless pork
1 tablespoon rice wine or white wine
3 tablespoons soy sauce
2 tablespoons grated gingerroot, divided
5 cabbage leaves
2 tablespoons vegetable oil, divided

  1. Cut the port into 2 inch slices.  Combine the pork, wine, soy sauce and 1 tablespoon of gingerroot in a medium bowl.  Let stand for 10 minutes.
  2. Stock the cabbage leaves and roll into a cylinder.  Slice the cylinder as if you were slicing off cookie dough.
  3. Heat 1 tablespoon of oil in a large skillet over a high heat.  Add the pork and reserve the marinade.  Cook, stirring until nearly done (about 5 minutes).  Push the pork to one side of the skillet.
  4. Add the remaining oil to the skillet and add the cabbage.  Cook, stirring until the cabbage wilts (about 2 minutes).  Stir in the pork, add the marinade and the remaining gingerroot.  Stir for a few seconds then remove from heat and serve immediately.

VARIATION

For a delicious meatless dish you can use a variety of your favorite vegetables instead of the pork.

EXPRESS COOKING

You can substitute pickled ginger for the gingerroot.  Pickled ginger can usually be found in the oriental section of your supermarket.  It keeps in the refrigerator for up to 1 year and has a great distinctive fresh ginger flavor.

MONEY SAVING TIPS

Cabbage is a very economical and healthy vegetable.  Check the price of napa or savoy cabbage as well as the traditional green variety.  Any variety of cabbage will work in this recipe.
