RANCH POTATOES

Preparation Time:  20 Minutes                              

Cooking Time:  20 Minutes

Make Ahead:  Cook the bacon and crumble
up to 6 hours ahead.  Refrigerate until
ready to use.

Serves 4

This is a great potato side dish for
barbecued pork or any pork dish.

SHOPPING LIST

Red Potatoes, Ranch Dressing, Sour Cream,Cheddar Cheese,
Bacon, Salt

INGREDIENTS

8 large red potatoes
1 cup ranch salad dressing
1 cup sour cream
1 cup cheddar cheese, divided
1/4 cup crumbled cooked bacon
1 teaspoon salt

  1. Preheat oven to 35 degrees.  Cut potatoes into quarters and place them in a large saucepan.  cover with water and bring to a boil over a high heat.  Cook until tender (about 8 minutes) and drain well.
  2. While the potatoes are cooking, combine the salad dressing, sour cream, 1/2 cup cheddar cheese and bacon in a large bowl.  Add the potatoes and salt and stir well.
  3. Spoon potato and bacon mixture into a medium baking dish and top with remaining cheddar cheese.
  4. Bake until bubbly (about 20 minutes).

VARIATION

Add a little color by mixing in 1/4 cup of chopped green onions.

EXPRESS COOKING

You can use store bought bacon bits, if you are really in a hurry.  Use the same amount as the freshly cooked bacon.

MONEY SAVING TIPS

You can make your own ranch dressing by combining 1 clove of garlic, 1 tablespoon of lemon juice, 1 tablespoon of dried parsley, 3/4 cup buttermilk and 1/2 cup mayonnaise in a blender.  Blend until smooth.
