SESAME-CHEESE CRISPIES

Make Ahead:  You can make these snacks up to 5 days ahead and refrigerate them in an airtight container

Makes 56 crispies

These snacks go with just about anything.

 

SHOPPING LIST

Cheddar Cheese, Rice Cereal, Sesame Seeds, Flour, Salt, Cayenne Pepper, Margarine

INGREDIENTS

2 cups all purpose flour
1/4 teaspoon salt
1/2 teaspoon cayenne pepper
2 sticks sliced margarine
12 ounces shredded cheddar cheese
2 cups crips rice cereal
1/4 cup sesame seeds

  1. Preheat oven to 350 degrees.  Mix flour, salt and cayenne pepper in a medium bowl. Cut in the margarine with a pastry cutter or two knives until coarse crumbs form.
  2. Add cheese, cereal and sesame seeds and mix well.
  3. Divide dough in half and shape each half into a log on wax paper.  Slice dough into 1/2 inch dics.
  4. Arrange discs on baking sheets and bake until crispies are firm and golden brown, about 15 minutes.

VARIATION

For a really spicy crispie, use pepper jack cheese instead of cheddar cheese.

EXPRESS COOKING

You can freeze the crispie dough logs in order to have quick hors d oeuvres.  Wrap each log in plastic wrap and freeze for up to two months.  When you are ready to use them, thaw slightly, slice and bake.

MONEY SAVING TIPS

If crispy rice cereal is not something you normally keep on hand, use the individuals serving size packs and use the rice cereal for these appetizers and save the rest of the different cereals for breakfast
