SHRIMP STIR FRY WITH CASHEWS

Make Ahead:  You can stir fry the
cashews up to 4 hours ahead, place
them in a covered container until
ready to use.  Do not refrigerate

Serves 4

Serve this tasty oriental dish with
steamed rice.

SHOPPING LIST

Shrimp, Soy Sauce, Cashews, Chicken Broth, Sesame Oil, Green Onions,
Cornstarch, Sugar, Vinegar, Red Pepper Flakes, Oil

INGREDIENTS

1 1/2 pounds shrimp, peeled and deveined
1/4 cup soy sauce, divided
2 tablespoons chicken broth or sherry, divided
1 tablespoon plus 2 teaspoons corn starch, divided
1 teaspoon sugar
2 tablespoons white wine vinegar
2 teaspoons dark sesame oil
1/3 cup water
2 tablespoons vegetable oil, divided
1/2 cup cashews
4 green onions, cut into 1/2 inch pieces
1/4 teaspoon red pepper flakes

  1. Place the shrimp in a medium bowl and add 1 tablespoon of soy sauce, 1 tablespoon of chicken broth and 1 tablespoon of cornstarch.  Stir to combine.
  2. Combine the remaining soy sauce, broth, cornstarch, sugar vinegar, sesame oil and water in a small bowl.
  3. Heat 1 tablespoon of oil in a large skillet over a high heat and add the cashews.  Stir fry until lightly browned (about 30 seconds) and remove from the skillet and set aside.  Heat the remaining oil.
  4. Add the green onions and red pepper flakes to skillet and stir fry for 30 seconds.  Add the shrimp and sauce and stir fry for about 3 minutes.  Add the sesame oil mixture and cook stirring for 1 minutes.  Stir in cashews and serve immediately over steam white rice. 

VARIATION

You can use cubed white meat chicken in place of the shrimp.  Cook the chicken until it is no longer pink.

EXPRESS COOKING

When you are really in a rush, replace the soy sauce mixture with 1/2 cup of bottled sweet and sour sauce.  Reduce the amount of water to 3 tablespoons.

MONEY SAVING TIPS

Cashews taste great, but can sometimes be expensive.  Try using dry roasted, unsalted peanuts in place of the cashews.  You can even buy them in the shell for an even greater savings.
