SPRING PEAS

Preparation Time:  5 Minutes                                  

Cooking Time:  15 Minutes

You can chop the lettuce up to 8 hours
ahead, cover and refrigerate until you
are ready to use.

Serves 6

This tasty vegetable side dish goes
great with pork chops

SHOPPING LIST

Lettuce, Peas, Green Onions, Fresh Parsley, Butter,
Sugar, Salt, Pepper

INGREDIENTS

6 tablespoons butter or margarine
1/4 cup finely chopped iceberg lettuce
1 package frozen peas (16 ounce size)
1/4 cup minced green onions
1 large spring of fresh parsley
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon pepper

  1. Melt butter or margarine in a medium saucepan and place the lettuce over the butter.
  2. Add peas, green onions, parsley, sugar, salt and pepper.
  3. Cover the saucepan and simmer until the peas are tender (about 15 minutes).  Stir occasionally
  4. Drain, remove the parsley sprig and serve immediately.

VARIATION

You can add 4 torn fresh basil leaves and 1 chopped sauteed onion for a mediterranean flavor.

EXPRESS COOKING

Save time by thawing the frozen peas before cooking.  This will reduce the cooking time to 10 minutes.

MONEY SAVING TIPS

You can use leftover peas from this side dish to make a delicious soup.  Please the peas in a blender, cover with 1 inch of chicken broth.  Add 1 to 2 tablespoons of sour cream and process until smooth.  Serve hot or cold.
