STEAK & CHEESE SANDWICHES

Preparation Time:  20 Minutes                              

Cooking Time:  10 Minutes

Make Ahead:  You can make these great
sandwiches, wrap them in foil, refrigerate
and have them ready for baking up to 2
hours ahead of time.
 

Makes 4 Sandwiches

Serve these special sandwiches with
shoestring potatoes, or any type of
french fried potatoes.

SHOPPING LIST

Beef Top Round, Bell Peppers, Provolone Cheese,
Sandwich Rolls, Oil, Salt, Onions

INGREDIENTS

3 tablespoons vegetable oil
2 onions (sliced into rings)
2 bell peppers (sliced into rings)
1 teaspoon salt
1 pound beef top round (sliced into strips)
4 sandwich rolls (split lengthwise)
1/2 cup shredded provolone cheese

  1. Preheat oven to 400 degrees.  Heat some oil in a large skillet over a medium heat.  Add onions, peppers and salt.  Cook the vegetables over a medium high heat until tender (about 10 minutes).
  2. Add the beef to the skillet and saute for 2 minutes for medium rare.  remove the beef and vegetables from the skillet with a slotted spoon.
  3. Divide the beef and vegetables evenly between the sandwich rolls and top with cheese.
  4. Loosely wrap each sandwich in foil and bake until cheese melts (about 10 minutes).

VARIATION

You can use Monterey Jack cheese with jalapenos for a zesty version of this sandwich

EXPRESS COOKING

To reduce your cleanup time, you can microwave the onions and bell peppers by placing them in a resealable plastic bag with 1 tablespoon of oil and microwave on HIGH for about 4 minutes.

MONEY SAVING TIPS

There is a big price difference between top round and a less expensive round steak.  You can slice the less expensive cut of meat thinly across the grain to tenderize...and no one will notice the difference.
