STEAK ROYALE

Preparation Time:  15 Minutes                              

Cooking Time:  10 Minutes

Make Ahead:  You can prepare the
vegetable medley up to 2 hours
ahead and reheat just before serving.

Serves 6

Serve this delicious steak and vegetable
dish with stuffed potatoes for a really
great meal.

SHOPPING LIST

Bacon, Green Onions, Celery, Mushrooms,
Flank Steak, Onions, Oil

INGREDIENTS

2 slices bacon
2 onions, thinly sliced
2 bunches green onions, sliced
4 celery stalks, sliced
1 cup mushrooms, quartered
1 1/2 pounds of flank steak
1 tablespoon vegetable oil

  1. Preheat the grill or broiler.  Fry the bacon in a large skillet over a medium high heat.  Remove the bacon from the skillet, drain and crumble.  Add onions, green onions, celery and mushrooms to the skillet.
  2. Cook, stirring occasionally until the vegetables are tender and browned (about 10 minutes).  Remove the skillet from the heat and stir in the bacon.
  3. Brush the steak with oil and grill for 5 minutes per side for medium rare.
  4. Slice the steak across the grain and serve with the vegetables alongside.

VARIATION

For a great oriental flavor, add 1 teaspoon of grated fresh ginger and a dash of soy sauce to the vegetable mixture during cooking.

EXPRESS COOKING

To quickly cook and crumble the bacon, chop the bacon before you brown it.  Once cooked remove the pieces from the skillet with a slotted spoon.

MONEY SAVING TIPS

A slab of bacon is usually less expensive that presliced packaged bacon.  You can tightly wrap and refrigerate the bacon and it will keep for up to 2 weeks longer than presliced bacon.
