VEGETABLE PLATTER WITH DILL DIP

Preparation Time:  20 Minutes                              

Cooking Time:  15 Minutes

Make Ahead:  You can make the dip the day
before and refrigerate in an airtight container.

Serves 6

You can serve this platter with just about anything.

SHOPPING LIST

Sour Cream, Lemon, Carrots, Fresh Dill, Cauliflower, Snow Peas, Green Beans
Mayonnaise, Salt, Pepper

INGREDIENTS

1 head cauliflower
2 ounces fresh snow peas
4 ounces fresh green beans
2 large carrots

DILL DIP
1 cup sour cream
1 cup mayonnaise
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup finely minced fresh dill (you can substitute 3 tablespoons of dried dill if fresh is not available)

  1. For dip, combine sour cream, mayonnaise, lemon juice, salt, pepper and dill in a bowl, cover and refrigerate
  2. Trim cauliflower into bit size pieces.  Fill a medium saucepan halfway with water.
  3. Bring water to a boil and add snow peas.  Cook for 1 minute, remove and place in a bowl of cold water.  Repeat same process with green beans.  Drain both vegetables.
  4. Peel carrots and cut into small sticks.  Arrange vegetables on a platter and serve with dip.

VARIATION

You can add a minced cucumber to the dill dip for a refreshing summer appetizer.

For a quick and easy way to cook the vegetables, lower or raise them in and out of boiling water with a small strainer.

MONEY SAVING TIPS

Sometimes fresh snow peas are rather expensive, you can substitute sugar snap peas, julienned green bell peppers or broccoli.  Any of them will give the platter a nice green color and taste great too.
