CHEESY VEGETABLE BAKE

Preparation Time:  10 Minutes                              

Cooking Time:  25 Minutes

Make Ahead:  You can prepare this casserole
up to 2 days ahead.  Store in a microwave
safe dish and when ready to serve, reheat in the
microwave on MEDIUM for 10 minutes
or until heated through.

Serves 6

This vegetable casserole goes especially well
with roast beef.

SHOPPING LIST

Swiss Cheese, Sour Cream, Frozen Mixed Vegetables, Mushroom Soup,
French Fried Onions, Pimiento, Pepper

INGREDIENTS

1 package frozen mixed broccoli, carrots and cauliflower (16 ounce size)
1 can chopped pimiento, drained and divided (4 ounce size)
1 can golden mushroom soup (10 ounce size)
1/3 cup sour cream
1/4 teaspoon pepper
1 can french fried onions, divided (10 ounce size)
1 cup shredded swiss cheese, divided

  1. Preheat oven to 350 degrees.  Grease a large casserole dish and combine vegetables, half of the pimiento, soup, sour cream, pepper, half of the fried onions and half of the swiss cheese in a bowl and mix.
  2. Spoon the mixture into a prepared casserole and bake for 20 minutes
  3. Sprinkle remaining fried onions and swiss cheese on top of the casserole and bake for another 5 minutes.
  4. Remove the casserole from the oven, sprinkle with remaining pimiento and let stand for 5 minutes before serving.

VARIATION

For a really cheesy casserole, use one can of cheese soup in place of the mushroom soup.

EXPRESS COOKING

To reduce baking time to 15 minutes, partially cook the frozen vegetables before mixing them with the remaining ingredients.

MONEY SAVING TIPS

To always make sure you are buying quality frozen vegetables, check for freshness by shaking the package.  they should be loose and pourable.  If the vegetables are clumped together, they have been thawed and refrozen.
